To celebrate the first day of Spring and the release of this bee-utiful book – Omar, The Bees And Me – from Owlet Press, we are making a deliciously easy honey cake!

I have so many fond memories of a little dairy farm in Devon, who also produced their own honey. We used to stay there over the summer, and watching the bees buzzing to and fro from their hives and then turning their honeycombs in a barrel to extract the honey was always such a highlight! *That and the sneaky honeycomb sticks I was allowed to have #sugarRUSH.
This honey cake recipe is included in Omar, The Bees And Me. We’ve shared it’s here, with permission of Owlet Press. And, to add to the fun, before making our cake, we listened to the story which has recently been read over on Moon Lane Children’s Books and Toys.

You will need:
Step one
Preheat your oven to 160 degrees (fan assisted) and prepare your cake tin by either greasing well or lining with baking paper (we lined ours with baking paper).
Step two
In a large bowl, beat the butter until it is soft and creamy. Add in the sugar and mix till creamed together.
Step three
Add the honey, salt, baking powder, flour and eggs into the large bowl, and mix well after each ingredient.
Step four
Pour the mixture into your pre-prepared cake tin and bake for 45 minutes until golden (we needed to bake ours for 1 hour).
Ta-dah! Here’s how our easy honey cake turned out. We decided to top ours with a honey buttercream. To do this, blend 100g butter with 200g icing sugar and then flavour with 1 really good tablespoon of runny honey.

I have never done much baking with honey, but I understand that it make for a much more moist and delicious treat!
