Please tell me that I’m not the only one who gets super excited about October? Because…. hello October, hello winter comfort food!!! #DoubleYum

 

I love it. It’s chilly outside, the leaves are crunchy (*possibly a wet slushy sludge mess) under foot, the evenings are darker, and EVERYONE wants to gather around the table to tuck into something warm, comforting and delicious.

Hello October, hello winter comfort food!

 

Here are a few of our most favourite winter comfort food recipes.

 

Baked eggplants – Saganaki

This is currently my absolute favourite! #DoubleFavourite. Even Little Button can’t get enough of it. It’s a Greek dish that goes perfectly with just about anything at all, or even on it’s own. I usually prep it as half an eggplant (aubergine) each. But, I could easily do one eggplant (aubergine) per person and know it would be wolfed down in seconds.

 

*You can adapt this recipe to make it without the tomato and feta cheese filling. I do this when short on time, and with a dusting of garlic granules before baking, for extra flavour.

 

 

Easy slow cooker chocolate and pecan fudge

Out of all the slow cooker fudge recipes we’ve tried (and we’ve tried a good few), this one sits just right. Serve with a steaming cup of tea or warm milk.

Slow Cooker Fruity Beef Casserole

This is a recipe that Jenni from Chilling with Lucas passed onto me one year, and I’ve used it ever since. There’s something so scrumptious about the flavour. Serve with cheesy mash!

Creamy chicken pie

Mmmmmm….. chicken pie! This isn’t the exact recipe I use, but it’s very, very close. With the chicken filling, I additionally add a big portion of sliced mushroom and asparagus. It makes the pie feel even more luxurious and full.

    These all sound delicious. I find it much easier decorating apple slices than whole apples. Which I’d started this years ago! xxx

  4. I was looking for some new slow cooker ideas and I am certainly going to give the fudge a go. I always make casseroles in the autumn and winter, but they get so ‘samey’ after a while. So I will definetly give the fruity beef casserole a go.
